Monkey Bread (Part 2)

Resipi asal homemade Monkey Bread yang saya ambil dari FB buzzfeedtasty tapi sebab tak berapa terang screenshot tu, akak adjust ler ayat tu sikit-sikit.. Ini resipi buat roti from scratch.. sebab dalam tasty video tu dia guna yang readymade monkey bread dough.



2 cups milk (I used full cream milk)
1/3 cup sugar
1/2 cup shortening
1/4 cup warm water
1 pkg active dry yeast
5 cups all purpose flour (I used high protein/tepung roti)
1/2 tsp baking soda
1/2 cup butter, melted
2 tsp salt
1/3 tsp baking powder


Dissolve yeast in warm water with a pinch of sugar for 5 minutes
Scald milk. Bring nearly to a boil, until tiny bubbles begin to form around the edges of pan. Remove from heat.
Stir in shortening and sugar until dissolved. Allow to cool to lukewarm.

Stir in yeast mixture and 3 cups flour. Beat until smooth. Transfer dough to a bowl brushed with oil. Coat dough with oil. Cover and let rise in a warm place for 2 to 3 hrs. 
Add remaining ingredients except for the butter. Knead 4-5 minutes. Allow the dough to rise for another hour.

Preheat oven to 350F (saya selalu guna 170C)
Melt 1/2 cup butter and allow to cool slightly. 
Dust a work surface with flour. Turn dough out and roll into 1 1/2" to 2" diameter balls. Dip the dough ball into the slightly cooled butter. Arrange in layers in a pan. 
Bake in preheated oven for 45-55 minutes. Cool for 5 minutes. 




8-12 oz Cream cheese
Chocolate chips (we used dark chocolate)
1 cup white sugar
2 tsp cinnamon
1/2 cup butter
1 cup brown sugar
1/2 cup walnuts (optional)

(boleh juga rujuk kepada resipi versi melayu akak sebelum ni..)

Preheat oven to 350˚F (175˚C)
Cut biscuits in half and cube the cream cheese (32 pieces). Flatten each biscuit and place one cube of cream cheese and a few chocolate chips in the center of each. Fold the biscuit dough around the cream cheese and chocolate and form into a ball. 

In a 1 gallon plastic bag combine 1 cup of white sugar and 2 tsp of cinnamon. Add 6-8 dough balls to the bag, seal the bag, and shake until well coated. Repeat for the remainder of the stuffed dough pieces. 

In a microwave safe bowl add 1 cup brown sugar and 1/2 cup butter. Microwave on high for 70 seconds - stopping halfway to stir. Remove from microwave and stir until it reaches a caramel consistency. 

To a greased Bundt pan sprinkle half of the walnuts, half the dough pieces, and drizzle half the caramel glaze. Repeat with remaining walnuts, dough, and glaze. 
Bake in preheated oven for 30-35 minutes. Remove from oven and turn upside down onto a plate to cool for 10 minutes before lifting off the pan (this way the warm glaze runs back through and fully coats all the bread)

Lift off the bundt pan, pull apart, and enjoy



Sebenarnya untuk flling kali ni akak campur sebahagian dengan cheddar cheese.. nak bezakan rasa. Lagipun akak lagi suka cheddar cheese tu.. Cuma bila dah bercampur-campur tu, tak tau mana satu cheesenya.. hehehe.
